Bacon-Wrapped Chicken With Basil

Bacon-Wrapped Chicken With Basil And Mushroom Sauce-makes 4
4 chicken breasts
4 slices bacon
1 jar pasta sauce w/mushrooms
4 ounces fresh mozzarella
2 tablespoons basil leaves, dried
1 teaspoon kosher salt
½ teaspoon black pepper, freshly cracked


Preheat oven to 425F. Heat a large cast-iron or other heavy “oven-proof” skillet over medium-high heat.
Rub each chicken breast with a mixture of salt, pepper and basil. Once the pan is heated, sear the chicken on both sides for about 2 minutes per side, or until golden brown. Then, turn off the heat and drain the juices from the pan. Wrap each breast with 1 piece of bacon and put it back in the pan seam-side down. Pour the pasta sauce over the chicken, making sure each breast is evenly-covered. Place the pan in the oven until the bacon is cooked and chicken is nearly done, about 15-20 minutes. Cut the mozzarella in 4 slices, place one slice on each breast and cook for another 3-5 minutes or until chicken is done. Let stand for 5 minutes and serve over pasta or rice.
