Hot Wings with Yogurt-Blue Cheese Sauce



Next time you have a party or just want something different, here's a good recipe to try.


Hot Wings with Yogurt-Blue Cheese Sauce-serves 4
Wings
2 lbs chicken wings, split at the joint
1 cup all-purpose flour
1 stick unsalted butter, cut into fourths
2 tbsp, 2 tsp ancho chili powder
1 tsp garlic powder
½ cup red wine vinegar
1-2 tbsp chipotle chile in adobo, pureed
1 tbsp New Mexico chili powder
1 tsp Dijon mustard
1-2 tbsp honey
1 tsp salt
Fresh ground pepper, to taste
Peanut oil for frying


Sauce
1 cup Greek yogurt
¼ cup blue cheese crumbles
2 tbsp red onion, finely grated
2 tbsp cilantro leaves, finely chopped


The sauce is pretty simple-mix together in a bowl and refrigerate for at least 30 minutes.
Now, the wings-
If your wings have not had the tips removed, do so and toss them out. In a large pan, heat 2 inches of oil to 375 F. Meanwhile, mix the flour, garlic powder, salt, pepper and 2 tsp of the ancho chili powder in a small bowl. Dip the wings in the powder until lightly coated. Now, cook in the oil for 8-10 minutes, until cooked through and golden brown. Place on paper towels to drain.
As for the rest of the ingredients, combine the vinegar, New Mexico chili powder, chipotle puree and the other 2 tablespoons of ancho chili powder in a large pan and bring to a boil over medium heat. Once heated, remove from heat and stir in the butter, mustard, honey and salt. Toss the wings in this mixture until coated, garnish with cilantro or parsley and serve!
