Tuna Salad Lunch: Mediterranean Style

I’m turning the traditional tuna salad recipe upside down: Who says tuna salad can’t be done the Greek way?

I love to put a Greek spin on almost any dish I make. Since StarKist Tuna Creations already has a Lemon Pepper flavor, they did half the work for me! Here is my favorite tuna salad recipe for lunch.





Greek Tuna Salad Lunch Recipe

Ingredients

• 1 pouch of StarKist Tuna Creations Zesty Lemon Pepper flavor

• 2 tbsp. fat free Greek yogurt (Perfect alternative to Mayonnaise!)

• 1 tbsp. olive oil

• Diced veggies of your choice (I like using red onion, celery, tomato and cucumber.)

• 3 oz. crumbled, low fat feta cheese

• Salad fixings

• Salt and pepper to taste

• Optional: Whole wheat pita bread

Directions

It can’t get much simpler than this. Put the tuna in a bowl, mix in the yogurt and olive oil then stir together.

Add your veggies and top it off with a little bit of salt and pepper seasoning. Pour everything in the bowl over a bed of salad. If you’re one of those people who just don’t feel filled up from a salad, toast and eat your whole wheat pita bread with the salad.

This lunch is perfect when I am busy and on-the-go. StarKist Tuna Creations comes in a pouch without the excess water and mess. No draining equals no hassle. It’s quick, easy, and obviously … delicious! As a health conscious woman, this is one of my favorite go-to lunches on a busy day. Enjoy!
