Smoked Sausage with Brown Rice and Apples



Here's a little-known but tasty take on smoked sausage.

Sausage with Brown Rice and Apples-serves 4
4 sausage links, cooked
1 apple-Fuji, Gala or Rome apples are preferred
2 cups brown rice, cooked
2 diced celery stalks
1 small onion, diced
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons apple cider vinegar
1 tablespoon unsalted butter
1 tablespoon water
1 tablespoon lemon juice
1 teaspoon ground cloves
½ teaspoon fresh rosemary, chopped
¼ teaspoon kosher salt
salt and pepper, to taste


Slice the sausages and combine with the rice in a large bowl.
Cut the apple into quarters and slice each quarter into 1/4” slices. Using medium heat, melt the butter in a skillet and saute the apples and cloves for 3 minutes or until the apples are soft. Add to the bowl.

Then, take the skillet you just used and heat the olive oil. Saute the onion, celery and rosemary for about 5 minutes or until slightly transparent. Add to the rice bowl and mix with salt and pepper. In a separate bowl, mix the vinegars with the lemon juice and water and pour over the rice. Top with feta cheese crumbles and serve.
